Recipe & Ingredients:

Better than Fish Sticks! A kid friendly fish dish

Cod Nuggets with Bang Bang dipping sauce served with homemade French fries. 

 

For the fish:

1.5 lb fresh cod cut into nuggets

1 cup Panko breadcrumbs

1/2 cup grated Parmesan 

1/2 tsp salt

2 eggs, beaten

1/2 cup flour

Mix Panko, Parmesan and salt together in a bowl. Put flour and egg each in a separate bowl. Bread each cod nugget by covering in the flour, then dredge in the egg, then cover with the Panko/Parmesan mixture last. Place pieces on a cookie sheet lined with parchment. Cook for 16 min on 425,  flipping at the half way mark. 

 

For the sauce:

3/4 cup mayo

1 T honey

1 T sriracha 

1 T sweet chili sauce 

1/4 tsp garlic powder

 

Mix together and serve for dipping.

 

French fries:

Cut 4-5 russet potatoes into French fries with skin on. In a cast iron skillet, Fry in canola oil until golden brown. Salt and pepper lightly while cooking.

Once golden and crisp, place on plate lined with paper towels, salt and pepper to taste and serve.
